Simple and Quick Dove Recipes For the Grill

Fond Memories of White Wing Doves and Dove Recipes

Growing up in South Texas, dove hunting season was an annual event that we always looked forward to. Labor Day weekend meant white wing dove season. And it was the last thing we did before the new school year started. These are the recipes that brought out the best in these little dove breasts and give us fond memories of a simpler time.

Dove Recipes for the grill should be quick and easy. Because dove meat is very lean, it can dry out and become pretty tough if you're not careful. Marinades help, as well as not overcooking.

This first dove recipe for the grill is so simple and delicious that it might be the only recipe for grilled dove you'll ever use. The bacon acts as the "baster" so you don't even have to raise the grill lid and get moist, tender dove meat with the great spicy flavor of jalapenos.

Bacon-Wrapped & Jalapeno-Stuffed Grilled Dove Breasts

INGREDIENTS:
-10 Dove Breasts(or whatever your limit was)
-10 slices bacon-5 pickled jalapenos, sliced lengthwise
-2 tablespoons melted butter
-1 teaspoon garlic
-1 teaspoon ground black pepper
-1 teasoon salt

DIRECTIONS:
Mix last four ingredients together. Pour over dove breasts and marinade at least 4 hours.

Place a jalapeno half inside the cavity. Wrap each dove breast with a slice of bacon and hold all together with a toothpick.

Grill over medium heat, about 4 minutes per side, until bacon is crisp and dove breasts are brown. Serve.


Grilled Dove & Beer Marinade

INGREDIENTS:
-10 dove breasts
-1/2 cup red wine
-1/4 cup Italian dressing
-1/2 can beer
-1 teaspoon cayenne pepper
-1/2 teaspoon salt
-1/2 teaspoon ground pepper

DIRECTIONS:
In a large bowl, mix all ingredients together except dove breasts. Then add the dove. Cover and refrigerate for at least 4 hours. Remove dove breasts and save the marinade.

Grill dove over medium heat until golden brown.

In a large pot place in the grilled dove and the marinade you saved. Bring to a boil. Reduce heat and simmer for 15-20 minutes and serve.
