Deliciously Grilled Crab Cakes Burger Recipe

Crab Cakes On The Grill

crab cakes The French are known for the incredible food dishes, and their amazing ability to get the most flavor possible out of just about any food. It stands to reason that they are able to take just about any kind of meat or fish, and make it something special on the grill. These delicious crab burgers will make you wonder why you haven't been cooking this way all along.

The most common edible crabs in the United States include the stone crab, the blue crab, the king crab, and the Dungeness crab. The Dungeness gets its name from a town in Washington state, where it was first commercially harvested.

Although the French normally use crab in a bouillabaisse, they also use it to cook these crab cake burgers. Whether cooked inside, or grilled outside these crab cakes are delicious.

Ingredients:

-1 tablespoon celery seeds
-6 dried bay leaves
-1/2 teaspoon dry mustard
-1/2 teaspoon ground cardamon
-1/4 teaspoon ground cloves
-1 teaspoon ground black pepper
-1 teaspoon Hungarian paprika
-12 ounces fresh crab meat, or 2 cans, drained
-3 cups white bread crumbs
-1/2 cup chopped green onions
-1 beaten egg
-4 tablespoons mayonnaise
-pinch of saffron
-1 1/2 tablespoons Dijon mustard
-juice from one lemon
-3 tablespoons olive oil
-4 split hamburger buns

Directions:

Ground the bay leaves and celery seeds in a spice grinder till powdered. Pour into a small bowl and add the mustard, cardamon, cloves, paprika, and pepper. Stir well and set aside for now.

In a small bowl, combine the crab meat, 2 1/2 cups of the bread crumbs, 2 tablespoons of the mayonnaise, the saffron, and 1 1/2 teaspoons of the ground spice mix. Add the beaten egg and with your hands, mix everything together thoroughly. Shape crab cake mixture into four four-inch patties.

Put the remaining breadcrumbs in a shallow bowl, and dredge the patties, making sure each one is well-coated in breadcrumbs. In a small bowl, add the remaining 2 1/2 tablespoons of mayonnaise, the mustard, and the lemon juice. Mix well and set aside.Preheat a charcoal or gas grill to 375 degrees.

Pour the oil into a cast-iron or nonstick skillet and add the crab patties. Make sure the skillet is directly over the hot coals or burner flames. Cook the crab burgers until golden brown on both sides (about 4 to 5 minutes per side). Place the buns on the grill when turning the patties.

Spread the mayonnaise mixture on one side of each bun, topping each with a crab patty, and serve.
